The my Heimat bread lame or scoring knife is a simple yet effective tool to score your sourdough loaf before baking. The two pine discs are held together with a small hex screw and hold a razor blade in between them. The razor blade can easily be swapped out or turned around, when it isn’t as sharp anymore. All metal parts are from stainless steel to avoid them rusting.
The Mühle stainless steel double edge blade is made in Germany, has good longevity and a 6/10 sharpness rating. After thorough testing of a variety of blades available in Australia, this is my preferred blade to score sourdough.
Included in the storage box with magnetic latch is an allen key to match the screw and a spare razor blade, as well as the assembled bread lame.
Please be careful at all times when handling the blade and assembled knife and keep out of reach of children.
